Healthy Valentine’s Day Dessert: Chia Seed Chocolate Pudding

Why do the holiday’s always have to derail our healthy eating momentum?

The great news is that you can still enjoy delicious flavors that you love, and feel a little less guilty about them when you use healthier ingredients.

For many, chocolate is one of those indulgences and too much usually isn’t a good idea.

With Valentine’s day right around the corner I thought I’d share a little about one of my favorite healthy ingredients, Chia Seeds and a healthy chocolate dessert made with them.

Having this sweet, healthy chocolate dessert will allow you to enjoy the holiday and get your chocolate fix! Plus it’s so healthy, if you love it, you could actually make it one of your daily snacks!

Chia Seeds

Chia seeds are a small dry seed and when wet develop a slight jelly outer coating and swell up slightly.

You can put chia seeds in almost anything. Some people put them on salads or smoothies, I use them in my overnight oats. You can check out my overnight oats recipes HERE under the Breakfast section. 

Where to Find Chia Seeds

You can find chia seeds in the baking section of your local grocery store. 

I find them at my local Aldi, Walmart and Target!

Chia Seed Health Benefits

Chia seeds have a ton of health benefits! Here are a few:

Omega-3 fatty acids

Rich in antioxidants

Source of fiber

Source of iron

Source of calcium

There are even some claims that Chia seeds aid in weight management.

Chocolate Chia Seed Pudding Recipe

This Chocolate Chia Seed Pudding recipe is a relatively smooth texture with small seeds from the Chia seed.

It is definitely a guilt free, healthy substitute for one of your usual snacks, but can be dressed up for an occasion such as Valentine’s Day. 

Add whipped topping, fresh fruit, dark chocolate shavings or nuts to make it really special.

Depending on serving size this will provide several servings.
